Got Garden Tomatoes? Make These!


Good Morning!

Not a lot of new things to report here in Kansas City, except it's still blistering hot, and we're starting to feel overrun with tomatoes from the garden!

But, I'm not sad about it. There’s nothing like a garden tomato, still warm from the sun and bursting with flavor and they deserve a recipe that helps them shine.

Here are three of my favorite ways to make the most of summer’s juiciest produce:

👉 BELT Sandwich (Bacon, Egg, Lettuce & Tomato)
A twist on the classic BLT, this breakfast-friendly version adds a runny fried egg for the ultimate savory sandwich moment.

👉 Herb Crusted Salmon with Tomato Salad
Juicy cherry tomatoes pair perfectly with crispy, herbed salmon. This dish is light, bright, and perfect for a warm night.

👉 Creamy Shrimp Pasta with Tomatoes
A comfort-food favorite that balances rich creaminess with the pop of fresh tomatoes. It's a quick dinner winner!

Grab a few ripe tomatoes from the garden—or your local farmer’s market—and dig in.

P.S. If you’re drowning in tomatoes (we’ve all been there), try out my Red Wine Pasta Sauce. You'll need about 6 cups of fresh diced tomatoes to substitute for the canned tomatoes!
